What is Sake?

Sake is a traditional Japanese alcoholic beverage, made through the process of fermenting rice that has been polished to remove the bran. Initial stages of the process involve the rice strains undertaking a milling process to remove outer layers, reducing grain size by over 50%. The parallel fermentation process involves converting the rice grain from starch to sugar and lastly fermenting until an alcoholic point is reached. Despite the exact origin of Sake being unclear, the earliest known production took place in China around around 500 BCE, following the introduction of wet rice cultivation. 

 

When and how to drink Sake?

For the best taste, it is recommended to serve your saki based on type and grade. Sake is traditionally served warm in porcelain or ceramic cups and is commonly paired with spicy dishes due to the contrast in flavours. Sake is suited to a range of Japanese foods, with the key to pairing being the type of sake that you are serving. Lighter cuisines are best suited to a smooth sake, while richer foods will often be served with a heavier sake and salty dishes with dry sake.
